Insects as food for humans

Eating insects, also in Europe, is currently in the spotlight. Perhaps we still consider it a bit odd, but in Asian countries, insects have been a tasty part of a culinary tradition for centuries.
Firstly, with high quality proteins and a low fat content, insects are a good, healthy alternative for the traditional bio-industry. Secondly, insects themselves require little food to yield a kilo of edible product. With a growing world population, climate change is on the way, as well as a scarcity of energy, insects are a perfect solution to food problems in the future.
It is therefore hardly surprising that major agricultural institutes such as the WUR (Wageningen University) and the HAS (Higher Agricultural School) research and promote the eating of insects. But renowned chefs are also excited about the culinary possibilities. Eating insects will become an absolute trend.
